Cheats Individual Apple Pies

I thought I would add these little apple goodies.

If like me you’re a no fuss cook without loads of time you may like to give them a try. I first made these last Christmas as a pudding alternative and served with double cream. Yummy.

I had a pack of short crust pastry in the freezer so I didn’t make pastry but you may like too. You will need.

1 large cooking apple

Shortcrust pastry

A beaten egg to glaze and light brown sugar to sprinkle over before cooking. 

 

              

 Peel and core the apple, cut into 4. Cut a hole in each centre, which needs to be biggish for the pastry to thread through.

 

Cut the pastry into strips and thread through and over the centre hole, repeat until you have covered all of the apple circles. (I found it easier to cut the strips in shorter lengths to thread through rather than one long length)  

Pop onto a greased baking sheet, glaze with a beaten egg and give each one a generous sprinkle of soft brown sugar.

Bake in the oven, electric mark 160 or gas mark 4 for approx 15mins or until the pastry is light golden brown. (Don’t over bake as the apple will turn mushy)

Delicious with cream or custard and a cost effective pudding for 4 people.
