Summertime Strawberry Fool
The wonderful days of Wimbledon are here! A perfect excuse for Strawberries and Cream on a fine summer’s day.
We had a little trip to the local strawberry picking farm to “pick our own” and I have to admit we did have a little taste, just to make sure they were as delicious as they looked.
Strawberries are such a British quintessential summer fruit which we all seem to love.
I thought it would be nice to use our new House and Home champagne dessert glasses to try out a strawberry fool recipe which is super easy and is ready in no time at all, especially good if you are short of time. Serves 4
. 2 cups of heavy cream chilled
. 4 cups of fresh strawberries
. 2 tablespoon sugar
. 1 teaspoon vanilla extract (optional)
. a few strawberries for garnishing.
- Place the chilled heavy cream into a large mixing bowl. Beat until light and fluffy. Set aside and chill until ready to use.
- Pop the strawberries in a medium bowl, sprinkle with the sugar and add the vanilla extract, now mash the strawberries leaving some of the pieces a little larger, don’t over mash. Let this stand for a few minutes.
- Add half the mashed strawberries to the whipped cream, folding in gently. Keep the remaining mashed strawberries to layer when serving.
Spoon some of the cream into your dessert glasses, then layer with the remaining mashed strawberries and spoon the rest of the cream on top, decorate with some strawberry slices.
Serve immediately or place in the fridge to chill until ready to serve.
