Sweet Apple Chutney

We had a few windfall apples after our apple picking party with the grandchildren, so I thought I would make some sweet apple chutney. I had no expectations and I was pleasantly pleased.
You will need
Apples 740g (26oz)
Sultanas 200g (7oz)
Sugar 140g (5oz)
1 heaped tsp ginger
1 heaped tsp cinnamon
Or 2 heaped tsp mixed spices
300ml (10 fluid oz.) white vinegar
Chop the apples into sugar cube size pieces. Weigh out the sugar and sultanas and pop into a heavy-bottomed pan along with the chopped apples. Add the white vinegar and spices.
Simmer until sticky and thick, around 50 mins or until the liquid is absorbed. Stir lots.
Empty straight into the clean jars while still hot, and seal.
I filled a kilner jar to pop in the fridge for Christmas, unopened it will last around three months and open at least 2 weeks. Or freeze in container when cold.
Notes
Pre- sterilise your jars
If you are using eating apples perhaps cut the sugar down a little.
I was pleased, it made more than I thought, one large or two smaller kilner jars around 750g.
A few ideas! I think I’m going to add some to a pastry case, it will make a great filling for a Christmassy tart, and possibly a replacement to cranberry sauce. Maybe add to a cheese board to dip into or as a topping for breakfast pancakes and a nice addition to plain yoghurt.
